Travis: "So, what's for dinner" Malea: "_____________" (Please help me fill in the blank)

Dearest Family,
Your little sister is in serious need of some new recipes and/or dinner ideas. I know you are all wonderful/amazing/gifted cooks because I have mooched off your tables many a time. So please, help a starving Travis and post a few of your favorite easy-enough-for-Malea-recipes. Since I don't have any recipes that I trust enough to share in return...you can count this as your charity work for the week. :) Thank you in advance for sharing your culinary skills.
Sincerly,
M. Snow

P.S. If you don't post within 7 days of reading this you will burn the last batch for 7 years. Seriously.

Paco's Favorite Spicy Chicken...

(You may want to avoid this while pregnant.)

1 medium white onion, but into 1/4-inch thick rounds.

Salt.

4 medium red-skin potatoes, sliced 1/4-inch thick.

8 skinless chicken thighs or breasts.

1 cup cilatro leaves

8-12 medium tomatillos, husked, rinsed and sliced 1/4-inch thick.

1/4 cpu of sliced canned pickled jalapenos. (you can just get the canned stuff).

In the crock pot...

Spread the onion over the bottom. Sprinkle with salt. Continue with layers of potato slices, chicken, cilantro, and then tomatillos, sprinkling salt evenly over each layer before moving to the next. (This is the only salt in the dish, so be sure to add enough.) Scatter the jalepeno slices over everything and then drizzle 2 tablespoons of the jalapeno juice from the can. Cover and cook for 6 hours.

To serve, simply transfer a portion of everything (onion, potato, tomatillo) to the plate and then drizzle the juice from the bottom over everything.

I don't know how I found her but I love what she makes. Some of seems like it would take way to much time but other recipes are very easy.
